This is actually my husband’s absolute favorite cake that I made into cupcakes for him this year. It really isn’t anything all that fancy or special, but it is something his mom used to make for him. When we first married, I had to get the recipe (if you can call it that) from her.
The cake is super simple, its just your basic yellow cake mix (he insists that this is what must be used). I try and make it a little fancier by using Betty Crocker’s Butter Recipe cake mix. The nice thing about mixes is that they always turn out light and fluffy, its pretty hard to mess one up.
The frosting is a bit trickier because there isn’t an exact recipe, I’ve had to learn to do it by taste and appearance. At first it will look very peanut buttery, that is what needs to change. The consistency needs to become much smoother and the color will lighten considerably. I’ve done my best to come up with a recipe below, but you will probably need to tweak it some.
- 1 cup Peanut Butter
- 1 teaspoon vanilla
- ¼ cup milk
- 4-5 cups Powdered Sugar
Mix all ingredients together. If it becomes too thick, add more milk. If it becomes too runny, add more powdered sugar.
